  • 12–14 large Roma tomatoes
  • 1 yellow onion
  • 10 cloves of garlic
  • 1 Tbs. tomato paste
  • 1 Tbs. sugar
  • 1 Tbs. hot sauce (Tabasco) to taste
  • 3 Tbs. fresh thyme
  • 1 lg. bunch fresh basil
  • juice of 1 sm. lemon
  • salt and pepper to taste
  • 1 C. heavy cream
  • croutons (optional
  • 2 tbsp flat leaf parsley, chopped

Begin by cutting tomatoes in half and onions into 1-inch pieces. Spread on a baking sheet. Add garlic and drizzle lightly over vegetables. Roast in a 350-degree oven for approximately 30 minutes. When finished, strain vegetables reserving oil and juices. Let cool. Remove peels from tomatoes. Place all in a food processor along with sugar, tomato paste, hot sauce, thyme, basil, parsley, salt and pepper. Process until mixture is smooth. Put pureed mixture into a large sauce pan and simmer for about 20 minutes. Add lemon juice and taste for seasoning. Slowly stir in cream until blended. Serve warm and with a cheese panini to complete.
