  • 3 large eggs
  • 2 tablespoons of water
  • 1/8 teaspoon of salt
  • A dash of pepper
  • 1 table of fresh chives, minced
  • 1 tablespoon of unsalted butter
  • ¼ to ½ cup of shredded cheddar cheese

In a small bowl, whisk together the eggs, water, salt, and pepper. Add in the chives and stir nicely.
Using a small nonstick skillet, melt the butter all over the pan in medium heat. Slowly add the egg mixture in the center and spread it around the pan evenly. Let the egg mixture cook until it appears less runny. Flip the omelet over and let it cook for about 1 minute. Flip the omelet over again. Lower the heat and sprinkle the shredded cheddar cheese on one side and let it melt. Fold the omelet in half.
Serve the omelet on a plate.
