Cheese Blintzes
Ingredients
- 1 giant loaf white bread
- two 8-oz. packages cream cheese at room temperature
- 2 egg yolks
- 3/4 C. sugar
- 1 C. butter
- 1/4 tsp. ground cinnamon
Directions
Filling: Combine cream cheese, egg yolks, and 1/2 cup sugar. Mix well.
Coating: Melt butter, 1/4 cup sugar, and cinnamon. Keep warm.
Cut off bread crusts. Flatten each slice of bread with a rolling pin until very thin. Spread each slice with filling. Roll up jelly roll fashion. Dip into coating mixture. Chill on waxed paper. Preheat oven to 350 degrees. Bake 15-20 minutes. Serve warm.
