Cheese Corn Chowder
Ingredients
- 1/4 C. butter or margarine
- 1/4 C. sliced green onions with tops
- 1/4 C. diced green pepper
- 1/2 C. flour
- 1/2 tsp. salt
- 3 C. milk
- 1 10 oz. can whole kernel corn, drained
- 1 C. chicken broth
- 1 1/2 C. shredded cheddar cheese
Directions
In 2-qt. casserole, melt butter for 1 minute. Add onions and green pepper. Cook, uncovered, 6 minutes, stirring 3 minutes. Stir in flour just until blended. Stir in broth. Add corn. Cook for about 5 minutes then add cheese. Cook until cheese is melted.
