Cheese Corn Chowder

Try using Indian corn right off the cob for a pretty touch

Ingredients

  • 1/4 C. butter or margarine
  • 1/4 C. sliced green onions with tops
  • 1/4 C. diced green pepper
  • 1/2 C. flour
  • 1/2 tsp. salt
  • 3 C. milk
  • 1 10 oz. can whole kernel corn, drained
  • 1 C. chicken broth
  • 1 1/2 C. shredded cheddar cheese

Directions

In 2-qt. casserole, melt butter for 1 minute. Add onions and green pepper. Cook, uncovered, 6 minutes, stirring 3 minutes. Stir in flour just until blended. Stir in broth. Add corn. Cook for about 5 minutes then add cheese. Cook until cheese is melted.
