  • 1 C. rice, cooked
  • 3 zucchini, sliced
  • 1 (4 oz.) can chopped green chilies
  • 4 C. Monterey cheddar cheese, shredded
  • 2 C. sour cream
  • ΒΌ C. onion, diced
  • Salt and pepper to taste
  • 2 tsp. oregano

Preheat oven to 350 degrees. In a saucepan, bring 1 cup of water to a boil and add zucchini; boil for 5 minutes, drain, and set aside. In a greased baking dish, add rice and half of the cheese. In a bowl, combine chilies, sour cream, onion, salt, pepper, and oregano. Spread into casserole dish, top with zucchini, and sprinkle on remaining cheese. Cover and bake for 30 minutes; uncover and bake for an additional 10 minutes.
