This cheese-less casserole is so good you won’t even notice the lack of dairy. It is great served hot or cold making it perfect for any meal. Using a pre-made crust makes this recipe pretty easy and you can even buy a dairy-free crust.

  • 1 pie crust
  • 1 Tbsp. olive oil
  • 1 carrot, shredded
  • 6 eggs
  • 3/4 C. milk
  • 3 Tbs. all-purpose flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. sweet paprika
  • 1/2 tsp. dried thyme
  • 1/8 tsp. pepper

Pre-heat the oven to 350 degrees F. Poke holes in the piecrust using a fork and bake for 10 minutes. Saute the carrots in hot oil for 5 minutes or until soft. In a large bowl, whisk together eggs, flour, baking powder, milk, salt, paprika, thyme, and pepper. Pour the egg and mixture into the piecrust. Layer the carrots on top. Bake for 50 minutes or until toothpick comes out clean. Let cool for 10 minutes before serving.
