  • 12oz penne pasta
  • 24oz jar roasted red peppers
  • 1 cup parmesan, grated
  • 3 teaspoons honey
  • salt
  • pepper
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 8oz spicy Italian sausage, sliced
  • 3 cups mozzarella cheese, shredded
  • 1/2 lime, juiced

Preheat the oven to 400F and grease a baking dish. Cook the pasta according to the box and drain. Combine the red peppers, parmesan and honey in a food processor. Season with salt and pepper and add 2 tablespoons olive oil. Pulse and set aside. Heat the remaining olive oil in a skillet and add the garlic. Cook for 2 minutes and add sausage. Cook for 5 minutes, or until browned and stir in the pasta and sauce mix. Mix well and then pour into the prepared baking dish. Top with mozzarella cheese and bake for 8-10 minutes, or until cheese melts. Top with the lime juice and enjoy.
