Cheese Soup

If you just can't get enough cheese, you'll love this creamy Cheddar soup with onion, green pepper, and bacon bits.

Ingredients

  • 1 small onion
  • chopped celery
  • 2 to 3 Tbs. butter
  • bacon bits
  • green pepper
  • 2 cans Cheddar cheese soup
  • 2 can (2%) milk
  • 1 lb. Velveeta
  • 1 small pkg. grated sharp Cheddar cheese

Directions

Sauté onion, celery, bacon bits and green pepper in butter. Put in crock-pot. Add Cheddar cheese soup along with milk. Stir until smooth. Let cook slowly. Add Velveeta cut in chunks and grated Cheddar cheese. Let melt in crock-pot. Add more milk to thin if needed. Simmer in crock- pot 2 to 3 hours. Serves 6 to 8 people.
