Ingredients

  • 18 button mushrooms, stems chopped
  • 1 Tbsp. butter
  • 2 small shallots, minced
  • 1 large garlic clove, minced
  • 2 Tbsp. chopped parsley
  • 2 Tbsp. breadcrumbs
  • 2 Tbsp. chicken stock
  • 2 Tbsp. olive oil
  • 2 Tbsp. grated Parmesan cheese

Preheat the oven to 375 degrees. Meanwhile, heat 1 tablespoon butter in a skillet over medium high. Cook the mushrooms stems and the shallots 5 minutes while stirring. Add the garlic and season with salt, Stir well and cook another 2 minutes. Remove from the heat and add the parsley and breadcrumbs. Pour the stock into a food processor and the rest of the stuffing. Pulse into a paste. Stuff the mushroom caps with the paste and place on a baking sheet. Drizzle on olive oil and Parmesan. Bake 20 minutes until the cheese is slightly golden. Top with green onions if desired.
