Cheeseburger and Fries Soup

This is a hearty soup. It has the taste of eating a burger and french fries. I came up with this idea after asking my daughter what a really good meal was that she enjoyed a lot. She said she really liked a good burger so I began thinking of what goes into it. I came up with this recipe.

Ingredients

  • 1 lb. ground beef
  • 2 cans diced tomatoes
  • 1 red onion, diced
  • 2 Tbs. mustard
  • 1/2 C. ketchup
  • 7-8 red potatoes, diced
  • salt and pepper to taste
  • 1 tsp. garlic powder
  • 1 tsp. ginger
  • 1 tsp. curry powder
  • 2 tsp. hamburger seasoning (i.e. Grill Mates)
  • 1 box beef stock
  • 3 Tbs. butter
  • 2 Tbs. sour cream
  • 1 C. shredded mild cheddar cheese

Directions

Brown beef, pour stock in a pot and put cut potatoes in stock to boil. Add onions, potatoes, and seasoning. Add the beef, then stir in the ketchup and mustard. Let boil for 10–15 minutes. Reduce heat and simmer for 20 minutes. In a small pot, melt the butter. When melted add the sour cream, stir. Add in the cheese and stir until creamy. Add the cheese mixture to the soup pot and stir well. Let simmer on low heat for about 10-15 minutes. Serve piping hot with some toasted bread. Tastes like a cheeseburger!
