Where would Cheesecake Factory be without their delicious desserts? Take the challenge and recreate one of their classics - chocolate mousse cheesecake.

  • Crust:
  • 4 C. chocolate cookie crumbs
  • 1 C. butter, unsalted
  • Filling:
  • 6 oz. semisweet chocolate, finely chopped
  • 4 (8 oz.) pkg. cream cheese, softened
  • 1/2 C. sour cream
  • 1 1/4 C. sugar
  • 2 tsp. vanilla extract
  • 5 large eggs
  • Chocolate Mousse:
  • 1 tsp. gelatin
  • 1 Tbs. cold water
  • 1/2 c. sugar
  • 1/3 C. cocoa powder
  • 1 C. whipping cream
  • 1 Tbs. vanilla
  • Shaved chocolate to garnish

Preheat your oven to 350 degrees F. Melt butter in saucepan over medium heat. Remove butter from heat. Mix with cookie crumbs in bowl. Press mixture on 10-inch round pan. Bake crust for 8 to 10 minutes. 

In a small saucepan over heat, melt chocolate. Use electric mixer to stir cream cheese, sour cream, sugar and vanilla. Whisk eggs in bowl and add to mixture. Blend until combined. Pour filling on crust and bake for 45 to 50 minutes or until top is golden brown. 

To prepare chocolate mousse, mix gelatin with water. Add 2 Tbs. boiling water until gelatin dissolves. Cool. Mix sugar and cocoa in medium bowl. Add whipping cream and vanilla. Blend with electric mixer until thick. Cool chocolate mousse in fridge. Once chocolate cheesecake is cool, use a spatula to spread chocolate mousse on top of cheesecake. Sprinkle shaved chocolate on mousse and top with whipped cream.
