These apples are like mini bites of heaven! Perfect as either a Christmas or New Year's treat, you can make a whole tray for a crowd.

  • 6 Gala apples
  • 8 ounces cream cheese, softened
  • ¼ cup sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1 teaspoon cinnamon
  • Optional: raisins and pecans

Preheat oven to 350 degrees.  Slice the top off each apple and core them.  Scoop core out, widening it slightly so it holds more filling.

In a medium bowl cream sugar and cream cheese into a smooth mixture. Mix in vanilla, egg, and cinnamon. 

Spoon mixture into apples, filling about 2/3 of the core. Place on a baking sheet and bake for 20-25 minutes or until cheesecake filling is set. Refrigerate uncovered until completely cooled.

Apples can be served either at room temperature or chilled. If desired, top with raisins and pecans.
