Cheesey Potato Pie

You don't need an oven to make this delicious pie to feed a family of three.

  • 2 large potatoes, sliced
  • 1 whole onion chopped fine
  • 4 eggs
  • 5 strips bacon
  • 2 C. Kraft cheddar cheese
  • 1 (13 oz.) can evaporated milk
  • 4 eggs beaten

Fry bacon. Fry potatoes, then onion in the bacon grease. Mix cheese with the beaten eggs. Add milk and cooked onions and bacon. Put potatoes in bottom of microwavable dish. Pour the mixture over the potatoes. Microwave full power 2 minutes. Then on 70% power of microwave oven, continue cooking for 13 minutes. When done, place a sheet of wax paper over dish and leave to 10 minutes. Serve with a green vegetable or salad if desired.
