  • 1 cup of artichoke hearts, quartered, drained
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1⁄4 teaspoon oregano
  • ½ a cup parmesan cheese
  • 3 large eggs
  • 1⁄2 cup of fat free milk
  • 1 cup Monterey jack cheese
  • Salt and pepper to taste

Preheat oven to 350 degrees.
In a saucepan, add the butter, oil, oregano, and artichokes. Sauté for 5-10 minutes.
Grease a round baking pan and coat the sides and the bottom with ½ a cup of Parmesan cheese.
Spoon the artichoke mixture over the bottom.
Beat the eggs, milk, salt, pepper, jack cheese and the parmesan cheese.
Pour the egg mixture over the artichokes. Then Bake at 350 for 30 minutes.
