Cheesy Bacon Potatoes

- 4 large potatoes, peeled
- 1 C. cheddar cheese, shredded
- ¼ C. sour cream
- ½ tsp. Salt
- ½ tsp. Pepper
- 8 strips of bacon
- 3 Tbs. chives, finely chopped
In a large pot, place peeled potatoes and fill with water. Cover and bring to a boil. Cook for 15-18 minutes until tender, but still firm.
Preheat oven to 350 degrees. Once potatoes are cooked drain and place in a large mixing bowl. Use a masher or other utensil, mash potatoes. Fold in cheddar cheese, sour cream, salt and pepper. Mix until well blended.
Grease or spray non-stick cooking spray into a 13 x 9’ baking dish. Transfer potatoes into pan and spread evenly. Bake in oven for 35-40 minutes. In a large skillet, cook bacon. Remove from heat and pat dry with a paper towel. Crumble bacon and set aside.
Remove potatoes from baking pan. Add bacon and chives on top if desired. Serve warm.
