  • 5-6 C. butternut squash, peeled and cubed
  • 1 ½ C. spinach
  • ½ stick butter
  • 1 T. olive oil
  • 1 onion, diced
  • 1 C. buttermilk
  • 2 eggs
  • 2 tsp. thyme
  • Salt and pepper to taste
  • 2-3 C. cheddar cheese, shredded

Preheat oven to 375 degrees. In a large saucepan, boil squash in water for about 5 minutes; add in spinach and boil for 1 additional minutes until wilted. Drain and set aside. In a skillet, heat oil and sauté onions until translucent. In a bowl, whisk together buttermilk, eggs, thyme, salt, and pepper. Stir in onions, squash, and spinach to combine evenly. Transfer to a baking dish and bake for 45 minutes. Add cheese to the top and return to baking for an additional 15 minutes until golden.
