Cauliflower doesn't always have to be bland, it can be turned into a deliciously cheesy bake with bacon!

  • 1 lg. head cauliflower
  • 6 tablespoons butter, melted
  • 1/3 C. sour cream
  • 1/2 cup Parmesan cheese
  • 2/3 shredded cheddar cheese
  • 1/2 cup bacon, cooked and chopped
  • 2 tablespoon garlic, minced
  • salt
  • pepper

Preheat oven to 425 degrees. 

Rinse cauliflower and chop into small florets.  Place in an 8 x 8 baking dish.  In a small bowl, mix the melted butter, sour cream, and seasonings; pour over the cauliflower.  Sprinkle with the Parmesan cheese and chopped bacon.

Bake for about 25-30 minutes, stirring the cauliflower every 10 minutes.  Roast until it is browned on the edges and fork tender.

Sprinkle with the shredded cheddar and return to the oven for 5 minutes or until melted.
