Cheesy Baked Mushrooms and Rice
Ingredients
- 12 oz. sliced mushrooms
- 4 Tbs. butter
- 2 C. cooked brown rice
- 1 C. chicken broth
- 8 oz. shredded Italian blend cheese
- 2 Tbs. flour
- 1/2 C. sour cream
- 1 C. Half & Half
Directions
Preheat oven to 350 degrees.
In large skillet, saute mushrooms in butter until liquid from mushrooms is evaporated. When mushrooms are cooked, add chicken broth and half and half to skillet. Stir flour into sour cream and add to skillet. Stir until smooth. Stir in cooked rice and cheese. Transfer to 2 qt. baking dish and bake for 30 minutes, until bubbly and lightly browned.
