This dip is a spectacular topping for nachos and other party favorites. You can prepare it at the last minute. Lazy cooks can pull this together and still have a hearty and satisfying appetizer any time.

Serving Size / Yield

5-7 servings


  • 2 garlic cloves, minced
  • 1 1/2 C. medium or sharp cheddar cheese, shredded
  • 2/3 C. salsa
  • 1/3 C. green onions, sliced
  • 1 tsp. dried oregano
  • 1 tsp. ground cumin
  • 1/8-1/4 tsp. cayenne pepper, to taste
  • 1 Tbs. cilantro, minced (to garnish)

Drizzle a small amount of olive oil in a skillet. Sauté the garlic for 1-2 minutes. Add beans, cheese, salsa, onions, oregano and cayenne pepper to the pan and mix well. Cook over low heat, stirring occasionally, until cheese is melted.
