Take advantage of ripe zucchini with this delicious recipe. Stuff each zucchini with a tomato, beef, and rice mixture and top with extra mozzarella cheese.

  • 5-6 zucchinis, halved lengthwise
  • 1 tsp. olive oil
  • ½ lb. ground beef
  • ¼ C. rice, cooked
  • Salt and pepper to taste
  • 1 C. tomato juice
  • 2 C. mozzarella cheese, shredded

Preheat oven to 400 degrees. Hollow out zucchinis with a melon baller or spoon and set aside. In a large skillet, heat oil and brown beef until no longer pink. Season with salt and pepper and pour into tomato juice. Bring mixture to a simmer until thickened and remove from heat. Stir in rice and spoon mixture into zucchinis. Top with mozzarella cheese and bake for 30 to 45 minutes until tender.
