  • 1 chopped onion
  • 1 pound ground beef
  • 8 ounces shredded cheddar cheese
  • ½ cup oil
  • ¾ cup milk
  • 1 egg
  • Corn Bread Mix
  • 1 can drained black beans
  • 1 cup frozen corn
  • 1 teaspoon chili powder
  • ½ teaspoon cumin

Begin by preheating the oven to 400 degrees F. Cook the onion, meat, cumin, and chili powder in a skillet over medium heat. Cook for 10 minutes before adding the corn and black beans. Stir to combine. In a bowl, mix the corn bread, egg, oil, and milk. Pour this mixture into an iron skillet and bake for 15 minutes. Remove the skillet from the oven, add the meat mixture and top the skillet with shredded cheese. Bake for 10 more minutes.
