Is it Taco Tuesday already? Even if it isn’t, these mini taquitos are great any day of the week. They’re crunchy, cheesy and hit the spot every time!

Ingredients

  • 1 lb. ground beef
  • 8 corn tortillas (10 in.)
  • 1 Tbs. olive oil
  • ½ lime, juiced
  • 2 tsp. salt
  • 2 tsp. black pepper
  • 2 tsp. cayenne pepper
  • 3 tsp. Garlic powder
  • 1 Tbs. cumin
  • 1 Tbs. chili powder
  • 1 pkg. Shredded mild cheddar cheese

Directions

Preheat the oven to 350 degrees. Heat the oil in a large skillet on medium-high. Season the ground beef with the spices. Add in the ground beef and cook until it’s cooked thoroughly and crumbling. Using a biscuit cutter, cut the tortillas into smaller circles and set aside. Once the beef is cooked, use a small spoon to scoop it onto a small corn tortilla. Put a little bit of the cheddar cheese on top of all of the meat and fold the tortillas. Use a toothpick to keep the shell closed. Bake the taquitos for 10 minutes or until golden.
