  • 1 lb. ground beef
  • 1 1/2 C. cooked brown rice
  • 1 small onion, diced
  • 2 bell peppers, chopped
  • 2 cans tomato sauce
  • 1 1/4 tsp. Italian seasoning
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. balsamic vinegar
  • 1/2 C. shredded mozzarella

Preheat the oven to 375 degrees. Heat a skillet over medium high and cook the beef until no longer pink. Add the onion and bell peppers and cook another 3 minutes. Season the mixture with salt, pepper, Italian seasoning, Worcestershire, and balsamic. Add the brown rice and tomato sauce while stirring. Pour the mixture into a casserole dish and top with the shredded cheese. Bake 20 minutes until the cheese is melted.
