Cheesy Black Bean Dip
Ingredients
- 2 garlic cloves, minced
- 1 (15 oz.) can black beans, drained, rinsed and mashed
- 4 oz. cream cheese, softened
- 1 1/2 C. medium or sharp cheddar cheese, shredded
- 2/3 C. salsa
- 1/3 C. green onions, sliced
- 1 tsp. dried oregano
- 1 tsp. ground cumin
- 1/8-1/4 tsp. cayenne pepper, to taste
- 1 Tbs. cilantro, minced (to garnish)
Directions
Drizzle a small amount of olive oil in a skillet. Sauté the garlic for 1-2 minutes. Add beans, cheese, salsa, onions, oregano, cumin, and cayenne pepper to the pan and mix well. Cook over low heat, stirring occasionally, until cheese is melted. Transfer to a serving bowl and serve with tortilla chips.
