  • 6 leftover bagels
  • 1 cup grated cheddar cheese
  • 8 eggs
  • 2 ½ cups milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 ounces cream cheese
  • 2 tablespoons chopped chives

Coat a casserole dish with cooking spray and cut the bagels in half to begin. Then cut or tear the bagel halves into smaller bite-size pieces. Lay the bagel pieces at the bottom of the casserole dish. Sprinkle ½ cup of cheese over the bagels. Combine the eggs, milk, and salt and pepper in a bowl, mixing until the combination is smooth. Pour the egg mix over the bagels. Gently press down on the casserole to ensure the bagels absorb some of the egg mixture. Cut the cream cheese into smaller pieces and top the egg mixture with the cream cheese. Add the chives to the casserole and sprinkle the remaining cheese on top. Cover the dish with plastic and place it in the fridge for 2 hours. Then tent the dish with foil and bake for 40 minutes at 350 degrees. Uncover the casserole and bake for 15 more minutes. Cool for 10 minutes and serve.
