Cheesy Broccoli and Rice Soup

This is based off of my mom's broccoli casserole. To make this completely vegetarian, substitute vegetable broth for the chicken broth.

  • 1 C. chopped onion
  • 2 Tbs. butter
  • 1 10 3/4-oz. can cream of mushroom soup
  • 1/2 soup can of milk
  • 3 C. cubed Velveeta cheese
  • 5 C. chicken broth
  • 2 10-oz. pkgs. frozen chopped broccoli, thawed
  • 2 C. cooked rice
  • Garnish:
  • shredded cheese
  • sliced green onion
  • sour cream

Melt butter in a heavy saucepot. Saute onions until clear. Add mushroom soup, milk and cheese. Cook until well incorporated. Then add broth, broccoli and rice. Simmer for around 30 minutes.

Garnish with shredded cheese, green onions, and sour cream.
