Ingredients

  • 6 red potatoes, peeled and chopped
  • 1 ½ C. broccoli florets, steamed
  • 1 ½ C. shredded cheddar cheese
  • ½ C. yellow onion, chopped
  • 6 oz. cream cheese, cubed
  • 2 tsp. olive oil

Directions

Boil the potatoes until they’re just tender (about 10 minutes). In a skillet, heat the oil and saute the onion and broccoli. Once the potatoes are ready, drain them of water. Combine the potatoes, onion, broccoli, cream cheese, and ¾ cup of the shredded cheese. Put the mixture into a pan and top with the remaining cheddar cheese. Bake the casserole for 30 minutes.
