  • 5 C. loosely chopped cauliflower
  • ½ lemon
  • 1 ¼ C. milk
  • 1 T. olive oil
  • 1 egg
  • 2 T. flour
  • ½ tsp. salt
  • 1 tsp. pepper
  • 1 C. shredded parmesan cheese

Preheat the oven to 375 degrees. Steam cauliflower in a basket steamer with lemon half. Steam for 10 minutes. Drain the vegetable and transfer it to ice cold water to stop the cooking process. Drain this and set aside.

In a separate bowl whisk together milk, olive oil, and egg. When the wet ingredients are combined add in flour, salt, and pepper. Pour the sauce over the cooked cauliflower and toss to ensure an even coating. Pour the cauliflower in a greased casserole dish and cover with parmesan cheese. Bake covered for 40 minutes and then uncovered for another 5 to make sure the cheese gets melted and brown. Let cool before serving.
