Cheesy Cauliflower Soup

Ingredients
- 1/2 C. butter
- 1/4 C. chopped celery
- 3 tsp. flour
- 1/3 C. Swiss cheese
- 1/3 C. Cheddar cheese
- 1/3 C. Monterey Jack cheese
- 2 C. half-and-half
- dash of Tabasco
- 3/4 C. chopped onion
- 1 lg. head of cauliflower
- 3 C. chicken broth
- 1 tsp. pepper
Directions
In a large pot, melt butter. Add vegetables, sprinkle flour over vegetables until soft and golden. Slowly stir in broth. Heat until boiling. Reduce heat and let simmer for 20 minutes. Cool slightly. Blend in food processor, then return to pot. Boil, then reduce heat. Stir in milk, and return to a boil. Add cheese and stir until melted. Add seasonings to taste.
