  • 1 lb. fresh ground beef
  • 2 8 oz. cans tomato sauce
  • 1 tsp. parsley flakes
  • 1/4 C. chopped red onion
  • 1/2 tsp. oregano
  • 1 tsp. basil
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 10 oz. pkg. frozen chopped spinach, cooked and drained.
  • 1 pint low-fat cottage cheese
  • 2 8 oz. pkg. shredded mild cheddar cheese

Prepare and cook beef in a skillet and pour fat off after thoroughly cooked.  Combine and stir in the tomato sauce, onion, parsley, oregano, basil, 1/2 tsp. salt, and pepper. Simmer the pan uncovered for about 10 minutes, while occasionally stirring.  Couple the cooked spinach with the low-fat cottage cheese and remaining 1/4 tsp. salt.  After you have throughly stirred the spinach mixture together spread it around the edges of your (9x13 inch) baking casserole dish. Pour beef mixture into the center your baking dish and add your cheddar cheese on top of the beef. Load your casserole dish into the over and bake at 375 degrees for 20 minutes.
