  • 6 T. butter
  • 1 onion, diced
  • ¼ C. flour
  • 2 C. half-and-half
  • 3 C. chicken broth
  • Salt and pepper to taste
  • Dash nutmeg
  • 1 head broccoli, cut into florets
  • 1 carrot, peeled and diced
  • 3 C. cheddar cheese, shredded

In a large pot, melt butter and sauté onion until tender. Whisk in flour until golden; whisk in half-and-half until smooth. Add chicken broth, salt, pepper, and nutmeg. Bring to a boil, reduce heat, and simmer for 20 minutes until mixture thickens. Add broccoli and carrot while continuing to simmer for an additional 20 minutes until tender. Blend soup in batches, stir in cheese to melt, and serve.
