Ingredients

  • 1/2 lb. ground beef
  • 3 cups Water
  • 1 Clove garlic (minced)
  • 1 cup Long grain rice
  • 2 Tbsp. Margarine
  • 1 C. Shredded carrot
  • 8 Cherry Tomatoes cut in halves
  • 1 tsp. Dried parsley flakes
  • 1/2 tsp. Minced dried onion
  • 1/2 tsp. Salt
  • 1/2 tsp. Dried basil (crushed)
  • 2 oz. Sharp Cheddar cheese (shredded)
  • 2 oz. Mozarella cheese (shredded)

Directions

Preheat oven to 325 degrees. In medium saucepan, cook ground beef and add minced garlic on low-medium heat for 10-15 min. Cover and let sit. Drain liquid and fat. Add parsley, dried onion and salt. In the same saucepan, cook uncooked rice in margarine until golden brown, stirring frequently. Bring to boil, then reduce heat, cover and simmer for 5 min. Mix meat, cherry tomatoes, and rice together and pour into casserole dish. Cover and bake for 45 min. Uncover, add both cheeses to top of dish and bake for additional 5-10min.
