  • 4 chicken breasts, cooked and shredded
  • 1 onion, finely diced
  • 3 C. cheddar cheese, shredded
  • 2 cans red enchilada sauce
  • 1 can black beans
  • ΒΌ C. jalapenos, finely chopped
  • Flour tortillas

In a large bowl, mix together shredded chicken, cheddar cheese, onion, black beans, and 1 can of enchilada sauce. Fill flour tortillas with mixture and line up in a 9x13 baking dish, tortilla seams down. Cover with aluminum foil and freeze. When needed, thaw in refrigerator the night before. Remove aluminum foil, pour the second can of enchilada sauce over the top and sprinkle with extra cheese and diced jalapenos. Bake at 350 for 30 minutes.
