Cheesy Chicken and Vegetables

A very good main dish; serve with rice and a tossed salad to complete the meal.

  • 2 Tbs. butter
  • 1 C. clery, chopped
  • 2 lb. chicken, cut into bite-sized pieces
  • 1 32-oz. can stewed tomato
  • 1 C. small curd cottage cheese
  • 1 C. large curd cottage cheese
  • 3 lb. zucchini, diced
  • 1 Tbs. parsley
  • 1/2 tsp. oregano
  • 1/8 tsp. thyme
  • 1/8 tsp. garlic salt
  • salt and pepper to taste
  • 1/4 C. grated parmesan or romano cheese (optional)

Melt butter in large skillet and brown the celery, onion, and chicken. Drain excess fat. Add remaining ingredients (except cheeses), and simmer for approximately 25 minutes, or until the mixture achieves a thick consistency. Sprinkle with grated cheese, and serve.
