Rather than preparing plane chicken breasts on auto-pilot for a quick dinner (we’ve all been there), why not try adding some pan-seared flare. This is a flavorful chicken breast recipe with a cheesy twist and a healthy helping of veggies.

Ingredients

  • 4 boneless chicken breasts
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp garlic salt
  • 1 tablespoon water, or as needed
  • ½ cup shredded cheddar cheese
  • 1 tomato, diced
  • ½ red pepper, diced
  • 3 strips of bacon, cooked until crispy
  • To Garnish: 4 sprigs of basil

Directions

First things first, preheat your oven to 400 degrees F.
Next, cover your chicken breasts with a liberal amount of olive oil and sprinkle evenly garlic salt.
Once that’s done, place the pieces into a medium metal broiler pan. Bake for 10 minutes.
After your ten minutes are up, remove the pan from the oven. Flip each chicken breast over, then cut slices into the top of each breast to allow for more even cooking.
Next step: add your veggies. Sprinkle your diced tomato, red pepper, and pieces of bacon over the top of your chicken. Add 1 tbsp of water and 1 tbsp of olive oil, then place back into the oven and bake for another 10 minutes.
Once 10 minutes have passed, use an instant-read thermometer to check the internal temperature of the chicken. It should read at least 165 degrees F (74 degrees C).
When the chicken is thoroughly cooked, remove the pan from the oven then pour the ½ cup of cheddar cheese over the top. If the cheese doesn’t melt the way you want it to, feel free to stick it back in the oven until it is your desired level of meltiness. Then, all that’s left is to plate and serve.
