This is a perfect dish to whip up when you have leftovers from a rotisserie chicken. This creamy cheddar sauce brings together bites of tender pasta, steamed broccoli, and chicken. For an alternative recipe, swap out the pasta for rice!

  • 16 oz. orecchiette pasta, cooked and drained
  • 2 C. chicken, cooked and cubed
  • 1 (16 oz.) package frozen broccoli florets, steamed
  • 2 T. butter
  • ¼ C. flour
  • Salt and pepper to taste
  • 2 C. milk
  • 2 ½ C. cheddar cheese, shredded

Preheat oven to 375 degrees. In a greased baking dish, combine pasta, chicken, and broccoli. In a saucepan, melt butter and whisk in flour until mixture comes to a simmer. Pour in milk, salt, and pepper. Continue whisking while sauce simmers and thickens. Remove from heat, stir in cheese until melted, and pour over pasta. Bake for 20 minutes and serve.
