  • 1 (14 oz.) jar enchilada sauce
  • 2 C. shredded mozzarella cheese
  • 6 (6-inch) corn tortillas
  • 2 chicken breasts

Slice both chicken breasts into three pieces each. Place the chicken pieces into a small pot. Pour the enchilada sauce on top of the chicken. Cook and stir regularly over medium heat for 20 minutes, which is when the chicken should be cooked through. When finished, remove the chicken and use two forks to shred the meat. Preheat your oven to 375 degrees F.

Take out a baking dish and add 1/4 C. of the leftover enchilada sauce. Put two tortillas on top of the enchilada sauce. Top with 1/3 of the chicken, 1/3 of the rest of the sauce, and 1/3 of the cheese. Repeat this layering process until all of the ingredients have been used. Bake uncovered in your preheated oven for about 20 minutes, which is how long it should take for the casserole to be bubbly and for the cheese to melt. Serve.
