  • 2 whole chicken breasts, skinned, boned, halved, and flattened
  • 1/2 C. flavored bread crumbs
  • 2 Tbs. butter
  • 1 sm. onion, finely chopped
  • 1/2 C. cooked rice
  • 1/4 C. white raisins
  • sprig parsley, chopped
  • 1/2 tsp. curry powder
  • 1/4 tsp. poultry seasoning
  • 1/2 tsp. brown sugar
  • 1 clove garlic, chopped
  • 2 tsp. olive oil
  • 4 slices Monterey Jack cheese

In a flat dish, press bread crumbs into chicken on all sides.  Make stuffing by melting butter in a fry pan. Cook onion until yellow.  Add garlic, rice, raisins, parsley, curry powder, poultry seasoning, and brown sugar.  Mix well.  Oil an ovenproof casserole dish.  Lay breaded chicken in oiled casserole dish.  On each chicken breast, spoon prepared stuffing.  Top each portion with Monterey Jack cheese. Bake in a preheated 400-degree oven for 20 minutes.
