Your muffin tin is about to find a new use with this simple recipe. Theses tasty appetizers take only a few minutes and they are kid friendly to both make and eat. Tender potatoes, sweet corn, and a blend of two cheeses fill flaky puff pastry pockets. They make a delicious grab-and-go snack.

  • 1 sheet of puff pastry
  • 1 can of potatoes, drained
  • 1 C. corn kernels
  • ½ C. cheddar cheese
  • ½ Pepper Jack cheese
  • Preheat the oven to 350 degrees
