  • 2 eggs, beaten
  • 1 15-oz. can cream style corn
  • 8 oz. sour cream
  • 1/4 C. butter, melted
  • 1 15-oz. can whole kernel corn, drained
  • 1 1/2 C. shredded cheddar cheese
  • 1/2 C. chopped onion
  • 4 oz. diced green chilies, drained
  • 1 pkg. dry corn muffin mix

Preheat your oven to 350°F and lightly grease the inside of a casserole dish. In a large bowl, mix together eggs, cream style corn, sour cream, and melted butter. Add whole kernel corn, cheese, onion, and chillies. Pour in the muffin mix and stir until just combined. Transfer mixture to your prepared baking dish. Bake for 75 minutes. Let stand for 10 minutes before serving.
