Ingredients

  • 2 C. potatoes O'Brien
  • 3 Tbs. butter
  • 6 eggs
  • 2 Tbs. milk
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 C. pepper jack cheese, shredded
  • 1/2 C. cheddar cheese, shredded
  • 1 C. bacon, cooked and crumbled

Directions

Melt the butter in a pie dish. Add the potatoes and microwave for 8 to 10 minutes. Stir together the eggs, milk, salt, pepper, and pepper jack cheese. Pour over the potatoes. Bake at 350 degrees for 18 to 20 minutes, or until the eggs are almost set. Remove from oven and sprinkle with cheese and bacon. Bake for an additional 3 to 5 minutes, or until the eggs are set and cheese is melted.
