Ingredients

  • 1 T. olive oil
  • 1 lb. ground beef
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 (24 oz.) can diced tomatoes
  • 3 C. chicken broth
  • 1 ½ C. corn
  • 1 tsp. cayenne pepper
  • 1 T. oregano
  • 2 tsp. cumin
  • 1 T. brown sugar
  • Salt and pepper to taste
  • 1 ½ C. rice
  • 1 ½ C. cheddar cheese

Directions

In a skillet, heat oil and brown beef until no longer pink. Add in onion, garlic, diced tomatoes, and corn. Sauté briefly, pour in broth, and season with cayenne, oregano, cumin, brown sugar, salt, and pepper. In a greased casserole dish, add rice, skillet mixture, and top with cheese. Bake at 350 degrees for 20 minutes.
