  • 2 quarts water
  • 8 cubes beef bouillon, crumbled
  • 2 large onions, sliced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ¾ cups flour
  • ½ cup cold water
  • 1 cup heavy cream
  • 2 cups Colby-Monterey Jack cheese, shredded

In a large pot, bring 2 quarts of water to a boil. Stir in the bouillon cubes, letting boil for 10 minutes, or until dissolved. Place the onions and simmer for 30 minutes. Stir in the salt and pepper, simmering for 30 more minutes. Stir the flour with the ½ cup cold water to make a paste. Whisk the paste into the simmering soup, carefully to ensure the onions don't break. Simmer for 30 minutes. Stir in the cream and cheese until melted and heated all the way through. Thin with water if needed.
