  • 8 C. beef broth
  • 4 large yellow onions, sliced
  • 6 Tbs. butter
  • 2 cloves of garlic, minced
  • 1 bay leaf
  • 1 tsp. salt
  • ¾ tsp. pepper
  • 2 C. gruyere cheese, grated
  • Loaf of bread, sliced

Melt the butter in the crockpot and then throw in the onions. Place paper towels under the lid to absorb excess water. Stir the onions every 45 minutes for 5 more hours. Add in the broth, bay leaf, and seasonings. Cook on low for one hour. Pour the soup into bowls and place a slice of bread and as much cheese as you want on top. But the soup in the broiler on high 3 minutes or until the cheese is melted.
