  • 1 lb. ground turkey
  • 3 C. basmati or white rice
  • 2 C. chopped onion
  • ½ C. chicken broth
  • 1 can cream of mushroom soup
  • 2 tsp. garlic, minced
  • 1 (4 oz.) can chopped green chiles
  • 1 C. breadcrumbs
  • 1 ½ C. shredded cheddar cheese
  • Chopped cilantro, garnish
  • Olive oil for cooking
  • Salt and pepper

Heat the olive oil in a large skillet on medium-high. Season the turkey with salt and pepper and toss it in the skillet. Cook the meat until it starts to crumble and add in the onion and garlic. Add in the broth, rice, and chiles. Let this cook for about 15 minutes until the rice is tender. Add in the breadcrumbs and cheese, reserving some for topping. Top with cheese and broil on high for 5 minutes until the cheese is melted and browning. Top with the chiles.
