Cheesy Guacamole Cauliflower

This may sound strange, but it's one of the tastiest side dishes I've tried!

  • 1 med. head cauliflower
  • 2 C. guacamole
  • 1/2 C. shredded cheddar cheese
  • radish roses

Remove leaves and core from cauliflower.  In a covered saucepan, cook whole cauliflower in a small amount of boiling salted water for 20 to 25 minutes or until just tender.  Drain well and chill.  Place chilled cauliflower on a platter.  Spread guacamole over entire surface.  Sprinkle with cheese.  Garnish with radish roses.
