  • 1 French bread loaf, sliced
  • 2 T. butter
  • ½ onion, chopped
  • 4 C. cheddar cheese, grated
  • 12 eggs
  • 2 ½ C. milk
  • 1 C. cherry tomatoes, split
  • 4 C. ham, chopped
  • 2 garlic cloves, minced
  • 3 C. baby spinach
  • Salt
  • Pepper

Preheat oven to 375 degrees. Prepare a casserole dish by greasing it. Place the sliced bread into the greased casserole dish. Set it aside. Sauté the chopped onion and minced garlic cloves in a skillet with the butter. Transfer skillet mixture into the casserole dish. Add in the chopped ham, baby spinach, tomatoes. Beat the eggs with the milk and pour them into the casserole dish. Sprinkle the grated cheddar cheese. Sprinkle salt and pepper to taste. Bake for 45 minutes. Serve and enjoy.
