  • 2 Tbs. minced garlic
  • 1 Tbs. olive oil
  • 1 large head cauliflower, separated into florets
  • 3/4 C. grated Parmesan cheese
  • 1 C. sour cream
  • 1/2 onion, chopped
  • 1/4 C. celery, chopped
  • 1/4 C. green onion, chopped
  • Salt and black pepper to taste
  • 1 Tbs. chopped fresh parsley

Preheat the oven to 450 degrees. Grease a large casserole dish. Place the olive oil, sour cream and garlic in a large resealable bag. Add more spices and herbs to suit your taste. Add cauliflower, celery, onions, and shake to mix. Pour into the prepared casserole dish. Bake for 25 minutes, stirring halfway through. Top with Parmesan cheese and parsley, and broil for 3-5 minutes, until golden brown.
