  • 2 C. farfalle pasta
  • ½ stick butter
  • 1 C. mushrooms, sliced
  • 1 shallot, diced
  • 3 cloves garlic, minced
  • 2 tsp. rosemary
  • Salt and pepper to taste
  • ¼ C. flour
  • 2 C. milk
  • 1 C. cheddar cheese, shredded

Preheat oven to 350 degrees. Cook pasta according to package, drain, and set aside. In a large saucepan, melt butter and sauté mushrooms, shallot, and garlic until softened and fragrant. Stir in flour, cook for a minute, and slowly pour in milk and season with rosemary, salt, and pepper. Mix until sauce is smooth and begins to thicken. Remove from heat, add in cheese, and stir well until melted. In a greased baking dish, toss pasta with sauce and vegetables. Top with extra cheese and bake for 15 minutes until bubbly.
