  • ½ stick butter
  • 1 onion, diced
  • 4 stalks celery, diced
  • 1 T. rosemary
  • ½ tsp. sage
  • 2 tsp. thyme
  • Salt and pepper to taste
  • 1/3 C. parsley
  • 1 C. breadcrumbs
  • 1 C. mozzarella cheese
  • 2 boneless turkey breast halves, pounded thin
  • 2 C. chicken stock
  • 2 T. olive oil

Preheat oven to 425 degrees. In a saucepan, melt butter and sauté onion and celery until softened. Season with rosemary, sage, thyme, salt, and pepper. Stir in parsley and transfer mixture to a bowl and mix in breadcrumbs and chicken stock; set aside. Lay out turkey breasts, season with salt and pepper, spread on stuffing, sprinkle on mozzarella, and roll turkey up. Tie with kitchen twine, brush oil on the outside of turkey, season once again with salt and pepper, and roast 25 minutes. Reduce temperature to 350 degrees and continue roasting for 40 more minutes.
